Shakshuka is the kind of dish that rewards good eggs. With cage-free eggs from the Villa Market chiller, ripe tomatoes from our produce section and a little crumbled feta from the cheese counter, it comes together in one pan in about half an hour.

Method

  1. Warm olive oil in a wide pan over medium heat. Soften the onion and pepper for 6–7 minutes.
  2. Add the garlic, cumin and paprika and cook for 1 minute until fragrant.
  3. Stir in the tomatoes, season with salt and pepper, and simmer for 8–10 minutes until thick.
  4. Make four wells in the sauce and crack an egg into each. Cover and cook for 5–6 minutes, until the whites are set and the yolks are still soft.
  5. Scatter over the feta and herbs. Serve straight from the pan with warm bread.

Tips

  • For a richer sauce, add a spoon of tomato paste with the spices.
  • Want it heartier? Fold in spinach just before adding the eggs.
